Salsa Chicken Soft Tacos (From the Slow Cooker)


Hello everyone. I hope you had a wonderful Easter! Today I'm sharing a super easy Mexican style slow cooker entree. And I must say - These tacos were amazing! Even Little Miss (who never eats her Supper) finished all of hers, and then asked for more! And they were so easy to prepare! Who would have thought that cooking just 2 simple ingredients in the slow cooker, and then adding a few extra toppings - would turn out to be so delicious?! I just love simple meals like this. And I really love the fact that not only did the family enjoy it, but it was healthy too! We'll be adding this one to the rotation for sure!

Ingredients:
  • 2 Boneless Skinless Chicken Breasts
  • 1 cup Salsa (I used Pace medium, but pick your favorite)
For the Tacos:
  • Soft Flour (or Corn) Tortillas (taco size)
  • Shredded Mexican Cheese Blend (or any cheese you prefer)
  • Sour Cream
  • Chopped Fresh Cilantro
  • 1 Avocado, sliced into 16 slices
  • Sliced Black Olives (optional) 

Method:

Place the chicken in the bottom of the slow cooker. (Fresh or frozen, it's all good.) Pour the salsa over the top, and cover it with the lid. (There is no need to add any additional seasonings, the salsa adds plenty of flavor.) Cook on low for about 6 hours, or on high for about 3 hours, until the chicken is cooked through and falls apart easily. (If you notice a lot of liquid collecting in the bottom of the cooker, you may need to remove the lid, and allow it to dissipate, for about the last hour or so of cooking.) Shred the chicken, and stir to combine with the salsa.  

To assemble your tacos: 
Place a small amount of the Salsa Chicken in the middle of a soft tortilla. Top that with a little cheese, sour cream, and cilantro. Add 2 avocado slices, and a few black olives (if you're using them). Fold the tortilla in half and enjoy. 


Makes about 8 tacos.


To make this a complete meal, I served the tacos with refried black beans and Mexican rice.

*On a side note - Just go with me on the pictures for this one. Sure, it sounded good in my head, but I didn't realize it would be THAT good, so the pictures were kinda an after thought. Just try to ignore the paper plates, okay? lol. That's just real life around here. ;o)
