I had quite a few beets leftover after making a jar of Beet Pickled Eggs, so I decided to make this salad for lunch today. Oh boy was it good! The bold flavors (and colors) of this dish go really well together! Not only was it tasty and extremely good for you, but it was surprisingly filling as well. - 2 cups Spinach Leaves
- 1/2 cup Mandarin Orange Segments
- 1/2 cup Sliced Beets (canned)
- 1 Tbs Honey
- 1 Tbs Orange Juice
Prepare the dressing by mixing the honey and orange juice until the honey breaks down, and the mixture is smooth.
Arrange the spinach, orange segments, and beets on a plate.
Drizzle the dressing on top, and dig in!
