Summer is in full swing. One of the things that I love most about summer, is the variety of produce available throughout the season. Take blueberries and peaches, for example. The flavors of the two would have been great paired up in any number of desserts, but I try to make a conscious effort to limit the amount of sugary sweets that I consume. That is what is so great about this salad! You cover the need for sweet, yet get the satisfaction from knowing it was good for you too! It's a win - win.
The flavor of this salad was truly amazing! Peaches and blueberries naturally work well together, but the addition of spinach and chicken really set it off. And, topping it with a simple honey orange dressing was just the perfect touch! Give it a try, and let me know what you think.
- 2 cups Spinach Leaves
- 1 Peach, diced
- 1/2 cup Blueberries
- 1 precooked Chicken Breast, diced
- 1 Tbs Honey
- 1 Tbs Orange Juice
- Arrange a bed of spinach leaves in a plate or bowl.
- Place the chicken breast on top, in the center of the leaves. (You can use any kind of chicken breast you like, rotisserie, grilled, or even canned. Just use whatever you have on hand.)
- Scatter the diced peaches and blueberries around the chicken.
