Greek Tomatoes

Summer is in full swing, and the garden is overflowing with tomatoes! This recipe is one of my all time favorite ways to use some of them. I look forward to Greek Tomatoes every summer! Even my kiddos gobble them up. - But they have been known to sit down with an entire bowl of little tomatoes and eat them as if they were popcorn! :o)

Greek Tomatoes go great alongside most grilling menus, or you can just eat them as a snack all by themselves. If you're headed out, they can also make a cute party platter for those summertime get-togethers. 

This little snack is simple to make, and so yummy!  You might not ever eat a plain tomato again...

  • Tomatoes
  • Mayonnaise
  • Green (Jalapeno) Pepper Sauce, like Tobasco
  • Greek Seasoning (see photo)

Slice your tomatoes. I like to use Roma Grape (also called Juliette) tomatoes. They make the perfect little bite sized snack, but any tomato will work for this. Arrange your slices on a plate in a single layer, so you can add the toppings.

Place a dollop of mayo on top of each slice. Dribble a few drops of Jalapeno sauce on each one. Then, sprinkle them with a bit of Greek seasoning.

Put the plate in the fridge for at least 30 minutes (if you can wait that long) to let those flavors get all good and happy together.

Then, gobble them up!  Nom, nom, nom...
