Chicken Florentine Pizza


Many of you may have noticed that I like to post recipes that are quick and easy, yet pack a lot of flavor. Well, this is no exception. I know that it is hard to find the time to put a tasty and nutritious meal on the table some nights. (Let's be honest, most nights) The hustle and bustle of life just keeps getting in the way.  

This recipe is perfect for one of THOSE days. None of the ingredients don't require any thawing out, or any other advance preparation. As a matter of fact, you could almost call this one "Cheater Chicken Florentine Pizza".  ;o)

Here's what you'll need:

Ingredients:
  • 1 can refrigerated Pizza Crust
  • 3 Tbs Butter, melted
  • 1/2 tsp Garlic Salt
  • 1/4 tsp Italian Seasoning
  • 3/4 cup Spinach Dip
  • 1 - 13 oz can of Chicken Breast
  • 1/2 Red Onion, sliced
  • 1 cup Baby Portobello Mushrooms, sliced  
  • 1 cup Shredded Mozzarella Cheese 

Method:


Preheat your oven to 400 degrees. Lightly spray a baking sheet with cooking spray and gently press out your pizza dough onto it - to about 1/4 inch thickness. In a small bowl, melt the butter, and then stir in the garlic salt and Italian seasoning. Brush the seasoned butter all over the top surface of the dough, (see picture) reserving about 1 tablespoon of it for later. Then, pre-bake your pizza dough for 8-10 minutes. (8 minutes for dark pans. 10 minutes for air-bake pans.)





Remove the pizza from the oven and allow it to cool slightly. When it is cool enough to work with, spread the Spinach dip around your pizza, leaving a small outer edge untouched. The dip is your 'sauce', and the edge will be your crust. Now, top your pizza with the Chicken breast, red onion slices, and baby portobello mushroom slices. Finish it off with a layer of mozzarella cheese.


Slip the pizza back into the oven, and bake for and additional 6-10 minutes, until the cheese is all melted and gooey. Pull it out of the oven, and brush the crust with the remaining seasoned butter. Cut the pizza into slices, and enjoy this quick and flavorful meal.




Now, kick your shoes off & relax. Tomorrow's going to be another wild ride. :o)
