Gold Slaw (Coleslaw with Yellow Squash)


Have you ever had an abundance of yellow squash in your garden? Ours have gone absolutely crazy this year! We love yellow squash & have a bazillion recipes for how to use them, like Yellow Squash Custard Pie or Stewed Squash, but even so...  I am quickly running out of ideas, and the squash just keep coming! 

I added a couple of small squash to our coleslaw the other night - out of pure desperation. But you know what? It turned out to be something wonderful! The extra splash of color was really nice, too. As a matter of fact, I will probably start making our coleslaw with yellow squash all the time, at least while they're in season. Give it a try and let me know what you think... 

 Printable Recipe 
Ingredients:
  • 1 (14 oz) package of Coleslaw mix 
           ~or~  4 cups Shredded Cabbage and 1 cup Shredded Carrots 
  • 1 1/2 cups shredded Yellow Squash 
  • 1/4 cup Onion, thinly sliced (I used both red and yellow onion.)
  • 1/4 cup Sugar
  • 1/2 tsp Salt
  • 1/4 tsp Pepper 
  • 1/4 cup Milk
  • 1/2 cup Mayonnaise
  • 1 1/2 Tbs White Vinegar
  • 2 1/2 Tbs Lemon Juice


Method:

Combine the coleslaw mix (or cabbage and carrots), yellow squash, and onion in a large bowl.

In a smaller bowl, whisk together the rest of the ingredients, until smooth.

Pour the dressing over the veggies, and stir to combine. Cover and place in the fridge, to allow the flavors to marry, for at least an hour. The longer it sits, the better it gets.  

Serve with additional pepper on top, if desired.

Serves 6
