Cheddar - Crunch Country Ribs


On this, my one year blogiversary, I've decided to go back to the beginning. My very first post was a tasty little recipe called Ritzy Parmesan-Ranch Chicken Strips. That recipe was the whole reason Florassippi Girl was born. Well, if you like those tender little morsels, you'll love this new recipe! I decided to try something similar - but with pork. 

Mild cheddar, savory onion, and buttery Ritz crackers team up with boneless country ribs to create this tasty main dish! I'm telling y'all my mouth is watering just thinking about them!

Ingredients:
  • 2-3 lbs (15-20 pieces) Boneless Country Ribs
  • 1 sleeve Ritz Crackers
  • 1 - 6 oz. package (3 cups) French Fried Onions
  • 3/4 cup Finely Shredded Mild Cheddar Cheese
  • 1/3 cup Mayonnaise  OR  2 Eggs, beaten

Method:

Preheat oven to 375 degrees. Prepare a large baking sheet by lining it with tinfoil and spraying the tinfoil with cooking spray.

Place the Ritz crackers and french fried onions into a gallon baggie and crush until fine. Pour them into a shallow dish. Stir in the cheddar cheese. Mix together well.


Spread a thin layer of mayonnaise over each side of the country ribs, or dip them into the beaten egg. Then press one rib at a time into the crumb mixture, flipping and repeating, until all sides are coated.


Lay 'breaded' ribs on prepared baking sheet. Make sure they do not touch. After all the ribs are coated and on the baking sheet, sprinkle the tops of each one with additional crumb mixture, if desired. Bake in pre-heated oven until they are golden brown and the middles are no longer pink, approximately 40 - 45 minutes. Flip over halfway through baking.


Makes 4 - 6 servings

* This recipe uses pork country ribs, but would also work beautifully with chicken strips, if you prefer!
