Homemade Vanilla Ice Cream


Our family drinks quite a bit of milk. We always have some on hand. In fact, it's not uncommon at our house, when the jug starts getting low, to go ahead and buy another gallon and put it out in our garage refrigerator until it's needed.  Well, we were beginning to run low (actually we were almost out!), so I bought another gallon and just went ahead and put it in the kitchen refrigerator. There we were, happily drinking away on this new gallon (for several days) when I went out to the garage refrigerator to get something - and there it was! A brand new unopened gallon of milk that I bought a while back & had totally forgotten about! --- What's the date? Was it still good, I wondered? Today! The milk is dated TODAY!! 

Y'all know I hate to waste things, so how on earth am I going to use up this whole gallon of milk today?!? There is no way we could possibly drink all of it in one day, so I began to think. ICE CREAM!! Everyone loves ice cream, and it will use up quite a bit of that gallon!! Then we can just drink the rest with supper. Problem solved! And y'all get a fairly easy - rich and delicious recipe out of it too. You're welcome. :o)

Ingredients:
  • 10 cups Whole Milk
  • 2 cups Sugar
  • 6 Eggs, beaten
  • 1/4 cup Vanilla

Method:

In a large saucepan, combine the milk, sugar, and beaten eggs. Continue to stir over medium heat, until the mixture thickens and coats the back of a metal spoon. (Do not let it boil.)

Remove from the heat and stir in the vanilla.

Pour into a shallow but large (12+ cups) freezer container. Seal tightly, and place in the freezer. Stir every hour or so, until beginning to freeze. Then stir more frequently until frozen. *This recipe will also work in an ice cream maker, if you prefer. Just pour it in, and follow the manufacturer instructions for freezing. 

Makes about 3 quarts.
