Simple Pear and Cranberry Compote for Two


Don't let the simplicity of this dish fool you. The sweet flavor of the pears blended with tart Cranberries, gives this dish a sophisticated flavor that's fairly versatile too. It goes perfectly alongside many meals, especially pork dishes. Or it can be served as a dessert - perhaps with a little whipped topping or vanilla ice cream. Either way, this simple yet sophisticated pairing is sure to satisfy the most discerning of tastes.

Ingredients:
  • 1 (29 oz) Can of Pears (Or 1 quart jar homemade)
  • 1/3 cup Dried Cranberries
  • 1/4 cup Brown Sugar

Method:

Pour the juice from the can (or jar) into a saucepan or microwaveable bowl. Stir in the dried cranberries. Heat to boiling and remove from heat. Allow to stand until the berries plump, about 10-15 minutes.


Preheat oven to 375 degrees.


In a small oven safe dish, arrange a layer of pears (about half) in the bottom. Using a slotted spoon, scatter half of the now plumped cranberries over that, then repeat the layers with the remaining pears and cranberries. (You can now discard the juice used to plump the cranberries.) Sprinkle the brown sugar over the top.

Bake in the preheated oven, uncovered, until the sugar melts and begins to bubble, around 30 minutes. Remove from the oven, and allow it to cool slightly. Serve warm, and...
